Ingredients

4 large whole grain/gluten free tortillas
1 cup hummus
1 cup shredded carrots
1 cup shredded purple cabbage
1 cup baby spinach leaves or lettuce
1 bell pepper, thinly sliced (any colour)
1 cucumber, thinly sliced
Salt and pepper to taste (optional)

Instructions

Lay out the tortillas on a clean surface.
Spread a generous layer of hummus evenly over each tortilla.
Sprinkle shredded carrots and purple cabbage in a line down the center of each tortilla.
Top with baby spinach leaves or lettuce, bell pepper slices, and cucumber slices.
Season with salt and pepper if desired.
Roll up the tortillas tightly, starting from one end, to form wraps.
Slice the wraps diagonally into bite-sized pieces.
Serve immediately and enjoy the rainbow of flavours!
