Who doesn’t love summer picnics and barbecues? You know the scenario…family and friends getting together to toss the softball around, sitting back enjoying the warm summer nights, and the best part of all, sharing a meal with loved ones.  This summer, while planning your potlucks and summer parties, it’s important to think of the foods that will be served, and their nutritional values.  This “Cancer Fighting Salad” is not only rich in colour; it features plenty of cancer fighting nutrients. Coupled with salmon, or chicken (purchased locally and hormone free of course), this salad is light, tasty, and good for you!

Many studies show that avocados and tomatoes are important in the fight against cancer because of the richness in vitamins and minerals. With avocados high in carotenoids, vitamin E, and oleic acid one cup of avocados gives you 30% of your daily fibre, and has significant amounts of vitamin K, potassium, folate, and vitamin B all which are all important in cancer prevention.

Not to be outdone the tomato remains strong on the list of cancer fighting foods with its high Vitamin C, and Vitamin A levels, B vitamins such as niacin, riboflavin, minerals such as magnesium calcium & antioxidant lycopene.  Lycopene is so nutrient rich that studies in humans have shown it can protect against many cancers including: Breast Cancer, Lung, and Pancreatic – it’s an anti-oxidant that protects cells and fights cancer.  By adding only lime juice to this great summer salad; you keep it light, healthy and a rich in Vitamin C which is so important for cancer prevention!

Cancer Fighting Salad

Ingredients

3 avocados – peeled, pitted & diced or chopped
2 green onions, diced
2 large ripe tomato, chopped
1/4 cup chopped fresh cilantro
1/2 lime, juiced (or more suited to taste)
Salt and pepper to taste

Directions:

In a medium bowl, combine avocados, onion, tomato, cilantro and lime juice. Gently toss until evenly coated. Season with salt (lightly) and pepper.

FOODIE TIP! You can also get more creative by using orange or yellow tomatoes, and instead of regular sea salt, try a gourmet sea salt such as Hibiscus or Lavender!
